Before carrying out any maintenance work, cut off the power supply and unplug the machine to prevent accidental startup and personal injury. Wear cut-resistant gloves during operation.
1.Cleaning and Sanitizing
Clean the blade after each use to remove meat scraps, grease and protein deposits. Use warm water with mild food-safe detergent and clean with a soft brush or cloth. Abrasive materials such as steel wool and hard scraping tools are prohibited, as they may scratch and damage the cutting edge. Rinse thoroughly and sanitize in compliance with food hygiene requirements. Air-dry the blade completely; residual moisture will cause rusting.
2.Inspection
Inspect the blade regularly for nicks, cracks, deformation, corrosion, uneven edge wear or burrs. Replace the blade immediately if it is severely damaged; do not resharpen it. Also make sure the blade locking nut is tightened and the blade runs without wobbling.
3.Sharpening
Sharpen the blade when slicing becomes difficult or the cut surface is torn. Use the matching built-in sharpener or a dedicated sharpening stone. Follow the specified sharpening angle and duration. Avoid over-sharpening, which will shorten the blade service life. All metal grinding debris must be completely removed before the blade is put back into service after sharpening.
4.Anti-Rust Lubrication
After cleaning and drying, apply a thin coat of food-grade anti-rust oil or edible oil onto the blade surface and cutting edge to prevent oxidation and rust. Do not over-apply oil to avoid contaminating meat products. This step is especially important in humid working environments.
5.Storage and Protection
Fit the blade guard when the meat slicer machine is not in use. Store the blade in a dry place away from moisture and corrosive substances, and protect the cutting edge from impacts with hard objects.
6.Periodic Replacement
Even with proper maintenance, the blade will reach the end of its service life after prolonged use. Replace the blade in a timely manner if sharpening fails to restore sharpness, or if the blade sustains structural damage.
